Power Pancakes


4 egg whites
1/4 cup fat-free cottage cheese (low fat cottage cheese or fat free cottage cheese tofu)
1/2 cup old-fashioned oatmeal (uncooked)
1 tsp vanilla extract
1/4 tsp ground cinnamon
1/4 tsp nutmeg

In a blender or food processor, blend together all ingredients until smooth.
Spray a medium sized skillet with cooking spray and set heat to medium.
Add the pancake batter to skillet and cook until sides are lightly browned.
Top with a low sugar syrup and trans free butter. You can also top with blueberries or strawberries and forget the butter and syrup altogether.

*Considering the ingredients, they were pretty good! They are super high in protein so they're great after a workout! My kids ate them up and Kambree and Ava thought they tasted like pumpkin cookies! I'm guessing the nutmeg had something to do with it!
